Soft Gnocchi Potato Braise
Delicious Potato Braise with Chewy Gnocchi
Introducing a special and delicious potato braise made with the addition of chewy potato gnocchi. The sweet potatoes, which melt softly in your mouth, are excellent as a side dish for children, and are also a perfect summer side dish for the elderly as they are easy to digest. It’s great as a rice accompaniment or even as a snack.
Main Ingredients
- 4 large potatoes
- 20 chewy potato gnocchi (ongsimi)
- 1 mug of water (approx. 200ml)
- 3 dried red chilies
Seasoning
- 4 Tbsp soy sauce
- 2 Tbsp oligodang (corn syrup)
- 1 Tbsp plum extract
- 1/2 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, peel the potatoes and slice them about 1cm thick. Place the sliced potatoes in cold water for about 15 minutes to gently remove some of the starch. This helps prevent the potatoes from breaking apart too much during braising and allows them to absorb the sauce better. Drain them thoroughly in a sieve and set aside.
Step 2
Heat a pan with a little cooking oil. Add the prepared potatoes and stir-fry for about 1 minute, just to lightly coat them with oil. This prepares the potatoes to absorb the sauce. Then, add 1 mug of water (approx. 200ml) and 4 Tbsp of soy sauce to begin the braising process. Bring to a boil over high heat, then reduce the heat to medium and let the potatoes simmer until tender.
Step 3
Once the potatoes are somewhat cooked and the liquid has reduced by about half, add the prepared chewy potato gnocchi. After adding the gnocchi, stir in 2 Tbsp of oligodang and 1 Tbsp of plum extract to add glossiness and sweetness. Continue to simmer over medium heat until the gnocchi are cooked and tender. While cooking, spoon some of the braising liquid over the potatoes and gnocchi to enhance their flavor.
Step 4
When the sauce is almost reduced to a glaze and the ingredients are well-seasoned, finally add the 3 dried red chilies and 1/2 Tbsp of toasted sesame seeds. Gently mix everything together, being careful not to mash the ingredients. Turn off the heat immediately. The residual heat will allow the flavors to meld further.

Your sweet and chewy Gnocchi Potato Braise is ready! Enjoy it with a warm bowl of rice.
