Basic Ingredients- 350g All-purpose flour (medium-gluten)
- 9g Instant dry yeast
- 240g Warm water
- 15g Olive oil
- 15g Organic sugar
- 7g Natural sea salt

Step 1
In a mixing bowl, combine all the ingredients: all-purpose flour, instant dry yeast, warm water, olive oil, organic sugar, and natural sea salt. Use a dough hook or knead by hand until a smooth, elastic dough forms (approximately 10-15 minutes). Shape the dough into a ball and place it back into the bowl. Cover the surface with plastic wrap, poke 3-4 small holes for air to escape, and let it undergo its first rise in a warm place (around 28-30°C or 82-86°F) for about 40 minutes, or until the dough has doubled in volume.
Step 2
Once the first rise is complete, gently punch down the dough on a lightly floured work surface to release the air bubbles. Divide the dough into two equal portions of 270g each for the loaf bread, and divide the remaining dough in half to make two smaller portions for morning rolls. Shape each piece into a ball, cover them with plastic wrap or a damp cloth, and let them rest at room temperature for 15 minutes for an intermediate proof. This relaxes the gluten, making shaping easier.
Step 3
For the loaf bread, use a rolling pin to flatten each dough ball into a rectangle. Fold the top third down and the bottom third up, like a letter (trifold). Then, starting from the folded edge, roll the dough up tightly into a log shape. Pinch the seam firmly to seal it. For the morning rolls, simply shape them into tight rounds.
Step 4
Place the shaped dough into your bread pan(s) or baking sheet. Let them undergo a second rise in a warm place (around 35-38°C or 95-100°F) for about 40-50 minutes, or until they have doubled in size. While the dough is proofing, preheat your oven to 180°C (350°F). Once the second rise is complete, brush the tops of the dough evenly with the prepared egg wash for a golden sheen. Bake the loaf bread for about 25 minutes, and the morning rolls for about 15 minutes, or until golden brown and cooked through. Enjoy your delicious homemade butter-free bread!
