  • 50g Sunflower Seeds
  • 100g Hemp Seeds
  • 50g Sliced Almonds
  • 50g Dried Cherries
  • 50g Dried Blueberries

  • 120g Oligosaccharide
  • 15g Sugar

First, lightly toast the walnuts in a pan to enhance their nutty flavor. Once cooled slightly, break them into bite-sized pieces with your hands. Be careful not to crush them too finely.

Lightly toast all the nuts (walnuts, sunflower seeds, sliced almonds, dried cherries, dried blueberries, dried blackberries) over low heat. This toasts them, makes them safer to consume, and enhances their crispiness. Only the hemp seeds are used without toasting.

In a pot, combine the oligosaccharide and sugar. Gently stir to dissolve the sugar using the wrist action of your spatula, rather than vigorous stirring. This is key to preventing the gangjeong from becoming too hard! Once you turn on the heat, cook for exactly 3 minutes and 30 seconds. This precise timing is crucial for the right consistency.

After 3 minutes and 30 seconds, immediately turn off the heat. Quickly add all the toasted nuts and stir rapidly to ensure they are evenly coated with the syrup. Then, spread the mixture thinly and evenly into a prepared gangjeong mold or a pan lined with parchment paper.

Cover the spread with parchment paper and press down firmly with a flat object, such as a rolling pin or a dedicated press, to compact the gangjeong. Ensure it’s pressed evenly to set the shape.

Allow the finished gangjeong to cool completely at room temperature. Cutting it while warm can cause it to crumble, so waiting until it has fully hardened is important.
