Ingredients

  • 1 Onion, thinly sliced
  • 1/2 Carrot, thinly sliced
  • 3 Shiitake Mushrooms, thinly sliced
  • 1 large handful Spinach
  • 3 Eggs
  • 200g Heavy Cream
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • Generous amount of Cheddar Cheese (to taste)
  • Generous amount of Parmesan Cheese (to taste)
  • Butter (a little)
  • Olive Oil (a little)

Cooking Instructions

Lightly grease a pan with butter and olive oil. Add the prepared onion, carrot, shiitake mushrooms, and spinach, and sauté over medium heat. (You can use either butter or olive oil, or skip one.) Cook until the vegetables are slightly softened and fragrant, seasoning lightly with salt and pepper as you go. While the vegetables are cooking, preheat your oven to 180°C (350°F).

In a bowl, crack the 3 eggs and add the 200g of heavy cream for a richer, smoother texture.

Whisk the eggs and cream together thoroughly using a whisk or fork until well combined and smooth. Avoid creating too much foam; aim for a uniform, creamy mixture.

Pour the sautéed vegetables into your preheated oven-safe dish, spreading them evenly across the bottom. Carefully pour the whisked egg and cream mixture over the vegetables, ensuring they are covered.
