Sandwich Ingredients- 12 Morning Buns
- 10 Boiled Potatoes (medium-sized)
- 2 Boiled Eggs
- 1/2 Cucumber
- 30g Carrot
- 20g Raisins
- 15 Tbsp Mayonnaise
- 1 Tbsp Lemon Juice
- 3 Tbsp Sugar
- 5 Pinches of Roasted Salt
Cooking Instructions
Step 1
First, allow the boiled potatoes to reach room temperature, then microwave them for about 5 minutes to soften them further, making them easier to mash. Mash the potatoes thoroughly using a food processor or a fork until smooth. Ensuring there are no large lumps will result in a creamier salad.
Step 2
Prepare half a cucumber and about 30g of carrot. Soak the raisins in lukewarm water for about 10 minutes until they become soft and plump. Thinly slice the cucumber and carrot, then finely chop them. This will provide a pleasant texture in the sandwich.
Step 3
Finely chop the sliced cucumber and carrot using a food processor or a knife. It’s important to chop them into small pieces, similar in size to the mashed potato, so they integrate well into the salad and don’t make the sandwich difficult to eat.
Step 4
Sprinkle 3 pinches of roasted salt over the chopped cucumber and gently mix. Let it sit for about 5 minutes to draw out excess moisture, which prevents the salad from becoming watery. Add 2 pinches of roasted salt to the chopped carrot and let it sit for 5 minutes as well. Squeeze out any excess water from both the cucumber and carrot. Separate the egg whites from the yolks of the boiled eggs and finely chop the whites. Ensure the soaked raisins are drained.
Step 5
In a large bowl, combine the mashed potatoes with the drained, chopped cucumber, carrot, and plumped raisins.
Step 6
Add the finely chopped boiled egg whites to the bowl and gently mix all the ingredients together.
Step 7
Now, let’s season the salad! Add a generous 15 tablespoons of mayonnaise. Stir in 3 tablespoons of sugar for sweetness, and 1 tablespoon of lemon juice to add a refreshing tang that balances the flavors.
Step 8
Using a spatula or spoon, gently mix all the ingredients until well combined. Mix it with a ‘swish-swish’ motion until everything is evenly distributed, creating a rich and delicious potato salad.
Step 9
Carefully slice the morning buns in half horizontally. Be gentle to avoid crumbling the buns. Generously fill the bottom half of each bun with the prepared potato salad. Then, place the top half back on to complete your delicious morning bun sandwiches.
Step 10
Voila! Your sweet, tangy, and creamy morning bun sandwiches are ready. For an extra touch of deliciousness, sprinkle the reserved yellow egg yolks over any leftover potato salad and on top of the sandwiches. This adds a beautiful color and extra flavor. Enjoy your delightful creation!
