Soft Potato Pizza Bread

Make a special and delicious potato pizza bread by incorporating soft mashed potatoes into the chewy dough. This charming pizza bread is perfect as a delightful snack for children or even a light meal replacement.
Dough Ingredients- 100g Bread flour
- 100g Steamed and mashed potato
- 30-35ml Water
- 8g Grapeseed oil
- 5g Sugar (granulated sugar)
- 4g Fresh yeast
- 2g Salt
- 20g Levain (optional, for enhanced flavor)
Topping Ingredients- Finely minced onion
- Finely minced green bell pepper
- Pepperoni (to taste)
- King oyster mushroom, thinly sliced
- Corn kernels (canned)
- Pizza sauce
- Shredded mozzarella cheese (generous amount)

Cooking Instructions
Step 1
In a bowl, combine all dough ingredients except the mashed potato: bread flour, water, grapeseed oil, sugar, fresh yeast, salt, and levain. Mix them with a spatula or your hands until roughly combined. Adjust the amount of water based on the dough’s consistency.
Step 2
Add the prepared mashed potato to the mixture. Knead the dough thoroughly until it becomes smooth and all ingredients are well incorporated. The potato will make the dough exceptionally soft.
Step 3
Place the finished dough in a bowl, cover it with plastic wrap or a damp cloth, and let it undergo its first fermentation at room temperature for about 50 minutes. The dough is ready when it has increased to about 1.5 to 2 times its original size.
Step 4
After the first fermentation, divide the dough into portions of 65g each. Shape each portion into a smooth ball. Cover the dough balls with a damp cloth or plastic wrap and let them rest for 10-15 minutes for intermediate proofing. This step makes the dough easier to handle.
Step 5
Lightly grease the inside of an oven-safe gratin dish with oil. Place the rested dough into the prepared dish. Gently stretch the dough, being careful not to tear it, to cover the bottom and sides of the dish.
Step 6
Spread a layer of pizza sauce evenly over the base of the dough. Be mindful not to use too much sauce, as it can make the bread soggy. Adjust the amount to your preference.
Step 7
Evenly distribute the toppings over the pizza sauce: sprinkle the minced onion, minced green bell pepper, and sliced king oyster mushrooms. Adding a variety of vegetables will enhance the flavor and texture.
Step 8
Generously sprinkle shredded mozzarella cheese over the toppings. Arrange the pepperoni slices attractively on top, then add a little more mozzarella cheese to finish. This creates a visually appealing pizza bread.
Step 9
Preheat your oven to 230°C (450°F). Place the prepared pizza bread into the preheated oven and bake for approximately 10-15 minutes, or until the cheese is golden brown and melted, and the crust is golden. Adjust baking time according to your oven’s specifications.
