The Best Super Simple, Jiggly Steamed Eggs for Kids’ Breakfast (feat. Braun Steamer)
Have you ever thought that you couldn’t raise kids without eggs? Eggs are an essential ingredient, especially for young children who can’t handle spicy food well. We often have a simple breakfast of steamed eggs every Monday. Morning commute times are a real race against the clock, aren’t they? Haha. This soft and jiggly steamed egg dish is not only loved by kids but also by adults, making it a nutritious and satisfying meal.
Ingredients- 200g eggs (about 4)
- 3g salt
- 250g anchovy-kelp broth (about 1.3 times the weight of the eggs)
Cooking Instructions
Step 1
First, let’s make the anchovy-kelp broth, which is the foundation for delicious steamed eggs. Lightly toast dried anchovies in a dry pot to get rid of any fishy smell. Then, add water and kelp, and simmer for about 5-10 minutes to create a flavorful broth.
Step 2
Crack 4 fresh eggs into a bowl and add about 3g of salt. When whisking the eggs, avoid over-mixing to create too much foam. Gently whisk just enough to break the egg whites and yolks and ensure they are evenly combined. Be careful not to create excessive foam.
Step 3
Gently pour the prepared anchovy-kelp broth into the whisked egg mixture and stir. (Tip: The eggs I used were on the smaller side, weighing 182g, so I only added 230g of broth. Aim for an egg-to-broth ratio of about 1:1.3 for a wonderfully soft texture.)
Step 4
Now it’s time to steam the eggs. This is my Braun steamer, which I’ve been using for nearly 20 years without any issues! Pour the egg mixture into a suitable bowl, cover it with the steamer lid, and steam over medium heat for about 17 minutes. If you don’t have a steamer, you can also steam it in a pot using a double boiler method.
