Soft & Sweet Bread Pudding

Bread Pudding

  • 80g Bread (approx. 2-3 slices, cut into cubes)
  • 1 Egg (room temperature)
  • 150g Milk
  • 15g Sugar
  • 1g Salt
  • 3 Strawberries (or your favorite fruit)
  • 6 Blueberries (or your favorite fruit)

Cooking Instructions

Step 1

First, prepare the bread. Cut any leftover bread crusts or regular bread slices into uniform cubes, about 1.5cm in size. This ensures they are evenly distributed in the pudding for a delightful bite.

Step 2

Wash the fresh strawberries thoroughly, remove the stems, and slice them into quarters. Gently rinse the blueberries under running water. You can use other fruits according to your preference or skip them altogether.

Step 3

In a bowl, crack one egg. Add the 15g of sugar and 1g of salt. Whisk lightly with a fork or whisk until the egg is just broken and combined. Don’t overmix. Then, pour in 150g of milk and stir gently to create the egg mixture.

Step 4

Pour the prepared egg mixture over the cubed bread. Use a spoon or spatula to gently mix, ensuring that each piece of bread is fully soaked in the custard. Be careful not to break the bread apart; aim for even saturation.

Step 5

Add the sliced strawberries and blueberries (or your chosen fruits) to the soaked bread mixture and gently combine. Let it sit for about 5 minutes, allowing the bread to fully absorb the custard mixture.

Step 6

Butter the inside of your oven-safe ramekins or small baking dishes thoroughly. This prevents sticking and adds a lovely richness to the baked pudding. After buttering, sprinkle a little sugar inside the dish to coat; this creates a beautiful caramelized crust when baked.

Step 7

Carefully transfer the bread and fruit mixture, which has been soaking for 5 minutes, into the buttered and sugared ramekins. Sprinkle a little more sugar on top for an extra layer of caramelization. Bake in a preheated oven at 150°C (300°F) for about 30 minutes, or until golden brown on top and set in the center. Baking times may vary slightly depending on your oven.
