- 1,000ml Water (about 5 cups)
Seasonings & Condiments- 2 Tbsp Soup Soy Sauce (for savory flavor and color)
- 2 Tbsp Anchovy Sauce (for a deep, umami taste)
- 1 Tbsp Minced Garlic (enhances aroma)
- A little Sesame Oil (for nutty fragrance)
- A pinch of Black Pepper (to taste)
- 2 Tbsp Soup Soy Sauce (for savory flavor and color)
- 2 Tbsp Anchovy Sauce (for a deep, umami taste)
- 1 Tbsp Minced Garlic (enhances aroma)
- A little Sesame Oil (for nutty fragrance)
- A pinch of Black Pepper (to taste)
Cooking Instructions
Step 1
First, prepare your vegetables. Finely chop the green onion for a refreshing aroma and thinly slice the onion to bring out its natural sweetness.
Step 2
In a bowl, gently whisk the eggs until smooth. This will help them create lovely, soft ribbons in the soup. You can use a whisk or a fork.
Step 3
Pour 1,000ml of water into a pot. Add 2 Tbsp of soup soy sauce and 2 Tbsp of anchovy sauce. These will form the flavorful base of your broth.
Step 4
Bring the water to a rolling boil over high heat, then reduce the heat to medium. Add 1 Tbsp of minced garlic and the sliced onions. Cook until the onions become translucent.
Step 5
Once the soup returns to a boil, slowly drizzle the whisked egg mixture in a circular motion around the pot. Let the egg set for about 20 seconds before gently stirring with chopsticks to create soft, fluffy curds. Avoid over-stirring, which can break the egg into small pieces.
Step 6
Carefully empty the soft tofu from its packaging, keeping its shape as much as possible. Add it to the pot and gently break it into large, rustic pieces with a spoon. This preserves its tender texture.
Step 7
Simmer the soup for another moment after adding the tofu. Taste and adjust the seasoning with salt if needed. While the soy sauce and anchovy sauce provide good flavor, a pinch of salt can enhance it further, according to your preference.
Step 8
Finally, add the chopped green onions and simmer briefly to release their fresh aroma. Turn off the heat, and stir in a little sesame oil and a pinch of black pepper, if desired, for a fragrant finish. Your delicious soft tofu and egg soup is ready!
