Pancake Ingredients

  • 5 medium potatoes
  • 1/2 block firm tofu (approx. 150g)
  • 60ml milk
  • 1 tsp salt
  • 5 Tbsp cornstarch

First, prepare the 5 potatoes. Peel the potatoes thoroughly and then cut them into 8 wedges. Slicing them thinly will help them cook faster and make them easier to mash.

Place the prepared potato wedges in a microwave-safe bowl. Cover the bowl tightly with plastic wrap, then poke about 3-4 holes in the wrap with a fork. This allows steam to escape, ensuring the potatoes cook evenly. Microwave for about 9 minutes, or until the potatoes are tender. (Adjust cooking time based on your microwave’s power.)

Carefully remove the hot, cooked potatoes from the microwave. Transfer them to a large bowl. Using a potato masher or a fork, mash the potatoes until they are smooth and lump-free. Mashing them while they are still warm will make the process much easier.

Now it’s time to add the tofu to the mashed potatoes. Drain the tofu by placing it in a sieve for a few minutes, or press out as much water as possible using paper towels. Excess moisture can make the batter too wet. Add the drained tofu to the bowl with the mashed potatoes and mash them together.

Continue to mash and mix the tofu and potatoes together until well combined. As the tofu breaks down, it will naturally incorporate into the potato mixture, creating a cohesive batter. Ensure there are no large lumps and the mixture is smooth.

Next, we’ll add the ingredients to make the batter smooth and slightly chewy. Add 60ml of milk, 1 tsp of salt, and 5 Tbsp of cornstarch to the bowl. Mix everything thoroughly with a spatula or your hands until you have a well-combined batter. Check the consistency – it should not be too runny or too stiff.
