Soft Tofu Bibimbap with Wild Chive Sauce
A Flavorful Spring Bibimbap: Soft Tofu Mixed with Wild Chives
Here’s a delightful Soft Tofu Bibimbap, quickly made with a pack of fresh silken tofu and a vibrant wild chive sauce. The generous batch of wild chive sauce is versatile and can be used in other dishes too. Served with crisp sea purslane and fragrant shiitake mushrooms, this bibimbap offers a light yet aromatic flavor profile. It’s a healthy and delicious meal perfect for the whole family.
Main Ingredients- 1 pack soft tofu (silken tofu)
- 2-3 eggs
- 1 handful sea purslane
- 3 shiitake mushrooms
- 1 handful wild chives (dalrae)
Cooking Instructions
Step 1
Roughly chop the sea purslane into bite-sized pieces, about 2-3 cm long. Wash it thoroughly under cold running water, then drain well in a colander to remove excess moisture.
Step 2
Gently rub the root ends of the wild chives under running water to remove any soil. Trim off any tough root parts. Rinse them thoroughly.
Step 3
Finely mince the washed wild chives into small pieces, about 2-3mm thick, so they mix well with the sauce.
Step 4
In a bowl, combine the minced wild chives with the sauce ingredients: 2 Tbsp soy sauce, 1 Tbsp fish sauce (anchovy or sand lance fish sauce works well), 2 Tbsp water, 1 Tbsp red pepper flakes, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix everything thoroughly with a spoon or spatula until well combined to create the sauce.
Step 5
Slice the fresh shiitake mushrooms about 0.5 cm thick. Heat a frying pan over medium heat, add a little perilla oil (or cooking oil), and stir-fry the sliced shiitake mushrooms until they are lightly browned. Be careful not to overcook, as they can become tough.
Step 6
Fry the eggs to your preference, either sunny-side up (runny yolk) or over-easy (firm yolk). If making sunny-side up, try to keep the yolk intact for a beautiful presentation.
Step 7
Serve a portion of warm cooked rice into a bowl. Adjust the rice portion size according to your appetite.

Carefully scoop large chunks of soft tofu (about 2-3 pieces) using a spoon and place them gently on top of the rice. Avoid breaking them into small pieces to maintain a pleasant texture.
Step 9
Arrange the soft tofu on one side of the rice. On the other side, artfully place the drained sea purslane and the stir-fried shiitake mushrooms. Top the center with the fried egg. Serve the prepared wild chive sauce on the side. Mix everything together just before eating.
