Dough Ingredients

  • 1/2 block silken tofu (approx. 150g)
  • 1 egg
  • 2 Tbsp milk

For Coating

  • 2 Tbsp sugar (granulated or powdered sugar)
  • Vegetable oil for frying (as needed)

First, place half a block of tofu in a bowl and mash it thoroughly with a fork or masher until smooth and lump-free. If the tofu seems too wet, you can gently press it with a paper towel to remove excess moisture. To the mashed tofu, add 1 cup of pancake mix, 1 egg, and 2 tablespoons of milk. Mix everything together with a spatula or your hands until a cohesive dough forms. You don’t need to knead it extensively; just ensure there are no dry pockets of flour and all ingredients are well combined.

Prepare the sweet coating for your doughnuts using 2 tablespoons of sugar. If you’re using granulated sugar, you can briefly pulse it in a grinder (like a coffee grinder or blender) to make it finer. This helps the sugar adhere better to the doughnuts and creates a smoother texture. However, using regular fine granulated sugar is also perfectly fine if you prefer. For an even prettier and softer finish, consider using powdered sugar.

Now it’s time to fry the doughnuts. Pour enough vegetable oil into a pot or deep pan to submerge the doughnuts and heat it over medium heat. The ideal frying temperature is around 170°C (340°F). You can test this by dropping a small piece of dough into the oil; it should sizzle and float to the surface. Crucially, reduce the heat to low before adding the dough to prevent the outside from burning before the inside is cooked. Use a teaspoon to carefully scoop portions of the dough and gently drop them into the hot oil. The dough will puff up and form round shapes. You don’t need to fry them for too long. Once one side is golden brown, carefully flip them to ensure even cooking. Sometimes, the doughnuts will magically flip themselves!

Once beautifully golden brown, remove the fried doughnuts from the oil and place them on a paper towel-lined plate for a moment to drain excess oil. While they are still warm, immediately roll them in the prepared sugar or dust them generously with powdered sugar.
