Soft Tofu Mandu-guk (Dumpling Soup): A Hearty Meal
A Hearty and Delicious Tofu Mandu-guk Recipe Everyone Will Love!
This is an easy-to-make, soft tofu mandu-guk (Korean dumpling soup) recipe perfect for a comforting meal at home. The clear, savory broth combined with plump dumplings and tender tofu makes for a satisfying dish that will warm you up on a chilly day. I’ll guide you through each step so even beginners can easily follow!
Main Ingredients- 1 block of firm tofu (approx. 300g)
- 500g frozen dumplings or boiled dumplings
- 1000ml broth (anchovy-da shima or store-bought) (approx. 5 cups)
- 2 large eggs
- 1/2 stalk of white part of green onion (approx. 50g)
Cooking Instructions
Step 1
Prepare the broth, which is the foundation for a warm and deep-flavored soup. You can make your own by simmering anchovies and dashima (kelp), or use a store-bought broth for convenience. Aim for about 1000ml, which is approximately 5 cups. (Using a broth pack or dashima allows for a clear broth without extra bits.)
Step 2
To create delicate egg ribbons for the soup, crack 2 eggs into a bowl and whisk them thoroughly. Ensure the yolks and whites are well combined by stirring vigorously with chopsticks. You can easily achieve this by making an ‘X’ pattern with your chopsticks.
Step 3
Slice the white part of the green onion thinly. This will add color and aroma to your mandu-guk. Slicing them about 0.5cm thick will make them pleasant to eat and look at.
Step 4
Cut the block of tofu (about 300g) into bite-sized pieces. A 2-3cm dice is generally suitable. (If you prefer a softer texture, you can also scoop large pieces with a spoon.)
Step 5
Once the broth is boiling, add the prepared tofu and dumplings. You can add frozen dumplings directly. (Avoid stirring immediately after adding them to prevent them from breaking apart.)
Step 6
Add 1.5 tablespoons of soup soy sauce (or regular soy sauce) to enhance the savory flavor of the broth. Feel free to adjust the amount of soy sauce to your preference.
Step 7
Next, add 0.2 teaspoons of salt to season the soup. It’s best to adjust the salt and soy sauce amounts according to your taste. Now, wait for the ingredients to cook and the soup to come to a boil.

When the soup is bubbling vigorously, check if the dumplings are cooked through. When the dumplings are almost done, slowly pour the whisked egg mixture in a circular motion around the edge of the ladle into the simmering soup. Gently stir to cook the egg without clumping.

Finally, garnish the mandu-guk with the sliced green onions. Adding green onions makes the soup look and taste even fresher.
