Soft Tofu Pancakes
Chewy and Delightful Tofu Pancakes
Introducing a special pancake recipe featuring the moist and soft texture of tofu, a delightful alternative to traditional pancakes. Perfect for kids’ snacks or a healthy breakfast!
Ingredients- 150g Hotcake mix (pancake mix)
- 1 Egg
- 200g Silken tofu
- 50g Plain yogurt
- Honey, to taste
- Butter, to taste
Cooking Instructions
Step 1
In a bowl, combine the egg, silken tofu, and plain yogurt.
Step 2
Gently mix these ingredients with a spatula or whisk until they form a slightly lumpy mixture. It’s okay if there are a few small lumps.
Step 3
Add the 150g of pancake mix to the batter from step 1 and mix.
Step 4
Stir gently for about 1 minute, just until the flour is incorporated. Be careful not to overmix, as this can make the pancakes tough.
Step 5
The batter should be slightly thin but still drop from the spoon in thick dollops. A few lumps are perfectly fine.
Step 6
Heat a non-stick pan over medium-low heat. Lightly coat the pan with a thin layer of cooking oil using a paper towel.
Step 7
Pour the batter onto the heated pan using a spoon, making them about 1.5cm thick and relatively plump. Leave some space between each pancake.
Step 8
It’s crucial to maintain a low heat. Cooking on high heat will burn the outside before the inside is cooked through.
Step 9
Once bubbles start to appear on the surface of the pancakes and the edges look set, carefully flip them using a spatula.
Step 10
After flipping, reduce the heat even further to low.
Step 11
Cover the pan with a lid and cook for another 3 minutes. Covering helps to cook the pancakes evenly all the way through.
Step 12
Transfer the well-cooked tofu pancakes to a plate. Drizzle with warm honey and a touch of butter to your liking, and enjoy! (Feel free to add fruits or nuts for extra flavor.)
