Main Ingredients- 1 block of soft tofu
- 1 Cheongyang chili pepper
- 1/3 cup aged kimchi

Seasoning Ingredients- 1 Tbsp chopped green onion
- 1/2 Tbsp minced garlic
- 2 Tbsp soy sauce
- 1.5 Tbsp red pepper flakes (gochugaru)
- 3 Tbsp water
- 1 Tbsp sesame oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to the dish. Finely chop about 1/3 of a large green onion. Seed and finely chop 1 Cheongyang chili pepper for a spicy kick. Also, finely chop about 1/3 cup of aged kimchi. Having these ingredients prepped makes the cooking process much smoother.
Step 2
Pour 1 cup of anchovy broth into a pot or deep pan. Gently place the entire block of soft tofu into the pot. Turn the heat to medium and once the tofu is warmed and starts to simmer, use a spoon or spatula to break it into bite-sized pieces. Be careful not to crush the tofu too much as you cut it.
Step 3
Once the tofu begins to boil, add the seasoning ingredients to enhance its flavor. Stir in 1 Tbsp of soy sauce and 1/2 Tbsp of sesame oil. Let it simmer for a moment to allow the flavors to meld with the tofu. A brief simmer will bring out the tofu’s delicate texture and savory notes.
Step 4
Now, let’s make the delicious sauce. In a small bowl, combine 1 Tbsp of chopped green onion and 1/2 Tbsp of minced garlic. Add 2 Tbsp of soy sauce and 1.5 Tbsp of red pepper flakes (gochugaru). Stir in 3 Tbsp of water to prevent the sauce from becoming too thick, and 1 Tbsp of sesame oil for a nutty aroma. Finally, sprinkle in a pinch of sesame seeds for visual appeal and added flavor. Mix all ingredients thoroughly until well combined.
Step 5
Transfer the simmered tofu to a serving dish. Spoon 1-2 Tbsp of the prepared sauce over the tofu. Generously top with the finely chopped aged kimchi and 1 Tbsp of shredded seaweed (gim). Garnish with the chopped green onion and a final sprinkle of sesame seeds. This beautiful and flavorful soft tofu side dish is now ready to be enjoyed.
