Soft Tofu Stew (Sundubu Jjigae)
10-Minute Super Simple Soft Tofu Stew: Inspired by Zucchini & Dried Shrimp Soup
Many of you enjoy Zucchini and Dried Shrimp Soup, right? While rushing to prepare dinner one evening, I had an idea: what if I added soft tofu to it? I decided to make a mild and gentle soft tofu stew that even children would love, and they absolutely adored it! This recipe is incredibly quick and easy.
Ingredients- 2 blocks (approx. 800g) soft tofu
- 2 zucchinis (approx. 550g)
- 1 Tbsp salted fermented shrimp (saeujeot)
- 1 Tbsp perilla oil (deulgireum)
- 200-250ml water or broth
- 5-6 stalks green onions or scallions, chopped
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
In Korea, we commonly use what’s called ‘aehobak’ (Korean zucchini). This type might be called ‘pig zucchini’ in some places. While not as flavorful as aehobak, I bought a lot because it was on sale. Cut the zucchini into bite-sized pieces, similar to how you’d prepare it for soybean paste stew.
Step 2
In a deep pot, combine the cut zucchini, perilla oil, salted fermented shrimp, and minced garlic. Turn the heat to high. This initial step helps the zucchini absorb the nutty flavor of the perilla oil and the savory umami from the shrimp.
Step 3
Once the zucchini starts releasing its moisture and becomes tender after a brief sauté, reduce the heat slightly. You’ll notice the vegetables becoming softer and more hydrated from their natural juices.
Step 4
After the zucchini has cooked a bit, carefully add the soft tofu. You can add it in large chunks or break it up slightly as you add it. Be gentle, as soft tofu is delicate.
Step 5
Pour in the water or broth. I used anchovy and kelp broth, but regular water works just as well. If you prefer a thicker stew, use about 200ml. For a soupier consistency, use around 250ml. You can add an extra 0.5 Tbsp of salted fermented shrimp or soy sauce for seasoning, to your taste.
Step 6
After adding the liquid, gently break up the soft tofu with a spoon. Aim for a slightly chunky texture rather than completely mashing it, to maintain a pleasing mouthfeel.
Step 7
Finally, sprinkle the chopped green onions or scallions over the stew. Their fresh aroma will enhance the overall flavor.
Step 8
Gently stir everything together to combine the ingredients and allow the flavors to meld. Bring the stew to a simmer over medium-high heat.
Step 9
Once the stew is bubbling merrily, turn off the heat. Your warm and comforting soft tofu stew is ready to be enjoyed!
