First, in a bowl, crack 5 fresh eggs and add about 2 pinches of salt for seasoning. Whisk gently until smooth, being careful not to create too much foam. Thoroughly mixing the eggs is key.

In a separate small bowl, whisk 2 eggs with a tiny pinch of salt. This egg mixture will be used to coat the vegetables at the end, so preparing it without vegetables ensures a beautiful final appearance. This is a great tip for making a neat egg roll.
