  • 3 sheets of rice paper (round)
  • 1/3 cucumber
  • 1 king oyster mushroom (approx. 80g, for a chewy texture)

King Oyster Mushroom Galbi Marinade
  • 0.5 tsp minced garlic
  • 1 Tbsp soy sauce
  • 1 Tbsp sugar (adjust to taste)
  • 1 pinch sesame seeds
  • 1 Tbsp corn syrup or oligodang (for gloss and sweetness)
  • 0.5 tsp sesame oil
  • 1 pinch black pepper

Cooking Instructions

Step 1

First, prepare all the necessary ingredients for the Songi Naengmyeon Rolls. Fresh ingredients are the foundation of a delicious dish.

Step 2

Wash the king oyster mushrooms thoroughly, then cut them in half and slice them into bite-sized pieces, about 5cm long. Slicing them not too thin will give them a pleasant chew.

Step 3

Rinse the cucumber under running water, pat it dry, and julienne it into strips about 8cm long. The crisp texture of the cucumber will enhance the overall flavor of the naengmyeon rolls.

Step 4

In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp sugar, 0.5 tsp minced garlic, 1 Tbsp corn syrup (or oligodang), 0.5 tsp sesame oil, 1 pinch of sesame seeds, and 1 pinch of black pepper. Mix well to create the delicious galbi marinade. Coat the sliced king oyster mushrooms evenly with this marinade and let them sit.

Step 5

Heat a non-stick frying pan with a tiny amount of water. Add the marinated king oyster mushrooms and cook over medium-low heat, flipping them occasionally until they are lightly browned and tender. Be careful not to burn the marinade while ensuring they are cooked through.

Transfer the cooked galbi-marinated king oyster mushrooms to a separate dish. They have a wonderful flavor on their own.

Boil a generous amount of water in a pot. Once boiling, add the Nest Bibim Naengmyeon noodles and cook for 3 minutes over low heat. Be careful not to overcook the noodles; immediately rinse them under cold running water after draining to maintain their chewy texture.

Add the Nest Bibim Naengmyeon sauce packet to the cold, rinsed noodles and mix gently until the sauce is evenly distributed. For easier handling in the rice paper, you can cut the noodles with scissors into 2-3 sections.

Step 9

Prepare a bowl of warm water, the rice paper sheets, the mixed bibim naengmyeon, and the julienned cucumber at your table. The warm water is used to soften the rice paper.

Step 10

Dip a sheet of rice paper into the warm water for a few seconds until it becomes pliable, then lay it flat. Place a portion of the seasoned bibim naengmyeon and some julienned cucumber in the center. Fold in the sides of the rice paper, then roll it up tightly from one end to the other, ensuring no ingredients spill out. Roll it up snugly like making sushi rolls.

Step 11

Cut each rolled naengmyeon wrap into three equal portions. Arrange the cut pieces neatly, showcasing the colorful filling. Top each piece with the prepared galbi-marinated king oyster mushrooms. Adding the mushrooms makes the rolls even more appetizing.
