Soothing and Nutritious Vegetable Porridge
Effortless Homemade Vegetable Porridge Recipe
When someone in the house suddenly feels unwell, this is a quick and easy vegetable porridge you can make for them. You might feel hesitant to skip a meal entirely, but starving them isn’t ideal either. Here’s a simple and delicious solution! ^^
Main Ingredients- 4 baby abalone
- 15g onion (about 1/8 of a small onion)
- 30g carrot (about 1/6 of a small carrot)
- 1/2 bowl cooked rice
Seasoning & Garnish- 2 Tbsp sesame oil
- 1/2 tsp sesame seeds (or ground sesame)
- A little chopped green onion (for garnish)
- 2 Tbsp sesame oil
- 1/2 tsp sesame seeds (or ground sesame)
- A little chopped green onion (for garnish)
Cooking Instructions
Step 1
First, thoroughly clean the baby abalone, remove the hard mouthparts and side muscles, and finely mince them. Mince the onion and carrot very finely until barely recognizable. Heat 2 tablespoons of sesame oil in a pan over medium-low heat. Add the minced carrot, onion, and abalone, and sauté for about 2 minutes until fragrant. You’ll notice a delicious aroma as the vegetables begin to turn translucent.
Step 2
Once the vegetables are somewhat cooked, add 1/2 bowl of cooked rice and stir-fry them together for another 2 minutes. Stirring the rice will help it break down. Pre-stirring the rice before adding liquid will give the porridge a nuttier flavor and a chewier texture.
Step 3
Now, pour in about twice the amount of cooked rice in water (or anchovy-kelp broth) and bring to a boil over high heat. You can adjust the amount of liquid to achieve your desired porridge consistency. Use less water for a thicker porridge and more for a thinner one.
Step 4
Once the porridge begins to boil, reduce the heat to medium-low. Continuously stir with a spatula to prevent sticking to the bottom of the pot. Gently break down the rice grains as you stir to ensure a smooth texture. Lightly season with a pinch or two of salt at this stage. It’s best to adjust the seasoning towards the end.
Step 5
Ladle the finished vegetable porridge into a nice serving bowl. Finally, sprinkle with 1/2 teaspoon of sesame seeds (or ground sesame) and top with a little chopped green onion for a visually appealing and delicious nutritional boost! ^^
