A Special Pork Belly Dish Enjoying Southeast Asian Flavors at Home
This is a Southeast Asian-style braised pork belly dish using pork belly. Experience the rich, savory, and slightly sweet-spicy flavors reminiscent of Thai or Vietnamese cuisine, right in your own kitchen. It’s perfect as a side dish for rice or as a main course for a special meal.
Main Ingredients- Pork belly, about 300g, cut slightly thick
- 1 fresh chili pepper (e.g., Korean Cheongyang chili pepper)
Cooking Instructions
Step 1
Cut the pork belly into pieces about 1cm thick. A slightly thicker cut will yield a better texture after braising.
Step 2
Finely mince the chili pepper. Remove the stem and wash it thoroughly before mincing. If you prefer a spicier dish, you can leave the seeds in.
Step 3
In a bowl, combine the fish sauce, lemon juice, vinegar, minced chili pepper, water, and sugar. Stir well until the sugar is completely dissolved, creating a flavorful braising sauce. Ensure all ingredients are well incorporated.
Step 4
Heat a pan over high heat without adding any oil. Add the sliced pork belly and begin to stir-fry. The fat from the pork belly will render and cook it sufficiently.
Step 5
Continue to stir-fry the pork belly over high heat until it is about 80% cooked and has a nice golden-brown color. Some of the rendered fat should start to appear.
Step 6
Pour the prepared braising sauce over the 80% cooked pork belly. Keep the heat on high and continue to cook, stirring frequently, until the sauce thickens and coats the pork beautifully. Be careful not to let it burn. This process should result in a glossy, well-glazed pork belly.
