  • 1 whole chicken (cut for braising, approx. 1kg)
  • Herb salt, to taste
  • Milk, 500ml

Soy Garlic Sauce

  • Soy sauce, 2 Tbsp
  • Water, 5 Tbsp
  • Oyster sauce, 2 Tbsp
  • Sugar, 1 Tbsp
  • Mirin (rice wine), 2 Tbsp
  • Corn syrup (or honey), 2 Tbsp
  • Minced garlic, generously (about 3-4 Tbsp)

First, prepare the chicken cut for braising (about 1kg). Sprinkle the chicken generously with herb salt. To tenderize the meat and remove any gamey odor, soak the chicken in 500ml of milk for about 2 hours. After soaking, rinse the chicken under cold water and pat it dry.

Now, let’s make the delicious soy garlic sauce! In a bowl, combine 2 Tbsp soy sauce, 5 Tbsp water, 2 Tbsp oyster sauce, 1 Tbsp sugar, 2 Tbsp mirin, and 2 Tbsp corn syrup. Whisk everything together until well combined. Finally, add a generous amount of minced garlic (about 3-4 Tbsp) for a rich, savory, and slightly sweet flavor profile. This sauce is designed to be addictively delicious!

Score the chicken pieces with a knife to help the marinade penetrate deeply. Place the prepared chicken into the soy garlic sauce and coat it thoroughly. Let the chicken marinate in the refrigerator for at least 1 hour, or ideally longer. The longer it marinates, the more flavorful it will become. For example, if you start marinating at 1 PM, you can begin cooking around 7 PM.

Arrange the marinated chicken pieces in the air fryer basket. Cook at 180°C (350°F) for about 15 minutes. For even crispiness, consider flipping the chicken halfway through the cooking time. Check that the chicken is golden brown, crispy on the outside, and juicy on the inside.
