  • 3 cloves Garlic
  • 2 Bay leaves
  • 3 Tbsp Soju (or cooking wine)

The first step to delicious ribs! Soak the pork ribs in cold water for about 20 minutes to remove any blood. Thoroughly removing the blood is key to achieving a clean, tender taste without any gamey odor.

Wash and chop the green onion into roughly 4-5cm pieces. Prepare 3 whole garlic cloves as well.

After draining the blood, cut the ribs into manageable pieces. Making small scores between the bones will help the sauce penetrate better and make cooking easier.

Now, let’s parboil the ribs. Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once boiling, add the prepared ribs, whole garlic cloves, bay leaves, 3 Tbsp of soju, and the chopped green onion. Bring it back to a boil over high heat.

When the water starts boiling again, reduce the heat to medium, cover the pot, and simmer for about 30 minutes. This parboiling step tenderizes the ribs and removes excess fat, making them more delicate.

In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp sugar, 1 Tbsp oligosaccharide, 1.5 Tbsp cooking wine, 1 Tbsp minced garlic, and 2 Tbsp water. Mix well until the sugar is dissolved. This golden ratio sauce will add a deep, rich flavor.
