Many of you love noodle dishes, right? I certainly do! While I love them, the preparation process can be a bit tedious, making it difficult to enjoy them often. Noodle soups require making broth, and for bibim guksu (mixed noodles), you need to prepare a delicious sauce. Today, I’ll share a recipe for a noodle dish that is incredibly simple and easy. This is a famous recipe from YouTube’s beloved Grandma Park Mak-rye. Watching her fun and savory cooking videos makes you want to try it right away! It’s as simple as making instant ramen, so once you try it, you’ll want to make it again and again.
Main Ingredients
- Somen noodles (2 servings)
- 1/4 zucchini
- 1/4 carrot
- 2 green onions

Cooking Instructions
Step 1
Wash the zucchini and carrot thoroughly and julienne them thinly. It’s even better if the zucchini, carrot, and green onions are cut to the same length. When the vegetables are similar in length and thickness, the dish looks more appealing. Since carrots are firmer, I sliced them slightly thinner. Zucchini cooks faster, so I cut it a bit thicker. You can adjust the thickness according to your preference.
Step 2
Bring a generous amount of water to a boil in a large pot. Once the water is rapidly boiling, add the somen noodles and cook them. Do you all know that to cook somen noodles to a chewier texture, you should add a splash of cold water when the water is boiling vigorously?
Step 3
You can stir-fry the vegetables one by one in oil and then mix them in. Alternatively, when the somen noodles are almost cooked, you can add the vegetables and blanch them lightly before rinsing them together with the noodles. For this simple noodle dish, I added the vegetables while cooking the noodles.
Step 4
Once the noodles are cooked, rinse them under cold water. If you boil the vegetables with the noodles from the beginning, they might become mushy instead of crunchy. That’s why it’s best to add them towards the end and blanch them briefly before rinsing them with the noodles.
Step 5
After rinsing the noodles, add 3 Tbsp soy sauce, 1 Tbsp minced garlic, 3 Tbsp sugar, 3 Tbsp sesame oil, and sesame seeds. Mix everything gently with your hands until well combined. You might find the initial ratio of soy sauce, sugar, and sesame oil to be 1:1:1, which seems unusual, but this equal proportion is surprisingly delicious! This is how you complete the dish.

Look how beautiful the colors are! Even with just a few vegetables, it’s so vibrant. This is what ‘sweet and savory’ perfectly describes. It’s sweet and savory, yet wonderfully nutty from the sesame oil. It’s not overly stimulating, but its addictive taste will have you finishing the whole bowl in no time.
