Ingredients

  • 1 bowl of warm cooked rice
  • 2 large eggs
  • 6 cloves garlic, minced
  • 2-3 stalks of green onions, finely chopped

Seasoning

  • 2 Tbsp soy sauce (or seasoned soy sauce)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • A pinch of shredded seaweed (gim)

Cooking Instructions

First, crack the 2 eggs into a bowl. Use a fork or whisk to beat them until the yolks and whites are fully combined and smooth. Whisking until the egg whites are no longer stringy will yield a better texture.

Heat 1-2 Tbsp of cooking oil in a frying pan over medium-low heat. Add the chopped green onions and minced garlic, and stir-fry for about 1 minute until fragrant. Be careful not to burn the garlic. Once fragrant, slowly pour the beaten eggs into the pan, starting from the edges. Use chopsticks or a spatula to scramble the eggs into bite-sized pieces as they cook. Aim for fluffy, soft scrambled eggs.

Push the scrambled eggs to one side of the pan. Add the 1 bowl of warm cooked rice to the empty space. Gently break up any clumps of rice with your spatula and press it down slightly. Pour in the 2 Tbsp of soy sauce and 1 Tbsp of sesame oil. Stir-fry the rice, ensuring each grain is coated with the soy sauce and oil, for about 1-2 minutes.

Now, mix the scrambled eggs back into the rice. Continue to stir-fry everything together for another 1-2 minutes until well combined and heated through. Just before turning off the heat, sprinkle in the 1 Tbsp of toasted sesame seeds for an extra nutty aroma and flavor.
