Instead of always making braised spicy chicken stew (dakbokkeumtang) when you have chicken, try this recipe! We used an air fryer to crisp up the chicken, then coated it with a delicious soy sauce glaze to create a fantastic chicken bowl. It’s a simple yet satisfying meal.

Main Ingredients

  • Chicken pieces for stew (dakbokkeumtang-yong) 1/2 chicken (approx. 500g)
  • Onion 1/2 medium

Soy Sauce Glaze

  • Soy sauce 5-6 Tbsp (adjust to taste)
  • Oligosaccharide or corn syrup 2 Tbsp (for gloss and sweetness)
  • Oyster sauce 1 Tbsp (for umami boost)
  • Cooking wine (Mirin) 2 Tbsp (to remove chicken odor and enhance flavor)

Cooking Instructions

Step 1

First, peel the onion and slice it thickly into strips or dice it. Heat 1-2 Tbsp of cooking oil in a frying pan over medium heat. Add the sliced onions and stir-fry until they begin to turn translucent. Continue to sauté until the onions turn a nice brown color and become caramelized. This will significantly enhance their sweetness and flavor.

Once the onions are nicely browned, push them to one side of the pan or set them aside temporarily. Add all the soy sauce glaze ingredients – soy sauce, cooking wine, oligosaccharide, and oyster sauce – to the pan. Bring to a simmer over low heat, stirring occasionally. Let the sauce thicken slightly. Be careful not to over-reduce, as it can burn.

Rinse the chicken pieces and pat them dry. Place them in the air fryer and cook at 180°C (350°F) for about 20 minutes, or until golden brown and cooked through. This method ensures a crispy exterior and juicy interior. If you don’t have an air fryer, you can bake them in an oven, pan-fry, or even boil the chicken beforehand. Once cooked, debone the chicken and cut the meat into bite-sized pieces.

Add the prepared chicken pieces and the sautéed onions to the simmering soy sauce glaze in the pan. Stir-fry everything together for about 3-5 more minutes, allowing the sauce to fully coat and penetrate the chicken. Serve this delicious mixture generously over a bowl of rice for a hearty meal, or enjoy it as a flavorful side dish!
