- Vinegar 1 part
- Sugar 1 part
- Water 1 part
- Soy Sauce 1 part
- Vinegar 1 part
- Sugar 1 part
- Water 1 part
Cooking Instructions
Step 1
Prepare firm, fresh green peppers. It’s best to choose peppers that have a vibrant color and a crisp texture.
Step 2
Remove the stems from the peppers. Wash them thoroughly under running water about two times to ensure all dirt and debris are removed.
Step 3
To allow the soy sauce mixture to penetrate the peppers effectively, pierce them beforehand. Use a skewer or a fork to poke the peppers about 2-3 times in various spots along the body. Be careful not to pierce too forcefully, as this could make the peppers mushy.
Step 4
The golden ratio for the marinade that determines the flavor of your soy sauce pickled peppers is 1:1:1:1 for soy sauce, vinegar, sugar, and water, respectively. This is a base ratio, and you can adjust it slightly to suit your personal taste.
Step 5
If you wish to adjust the seasoning, feel free to increase or decrease the amount of soy sauce according to your preference. You can also adjust the sugar for more sweetness or the vinegar for a tangier taste.
Step 6
Pour the prepared marinade into a pot and bring it to a boil. Boiling the mixture first mellows the sharpness of the vinegar, creating a smoother flavor profile, and helps the ingredients to pickle more effectively. After boiling, it is crucial to let the marinade cool down completely.
Step 7
Once the marinade has completely cooled, place the prepared peppers into an airtight container. Pour the cooled marinade over the peppers, ensuring they are fully submerged. After about 3 days of pickling at room temperature, you’ll have delicious soy sauce pickled peppers ready to enjoy! Remember to store them in the refrigerator after this initial pickling period to keep them fresh.
