Hello everyone! Today, I’ll guide you through an easy and detailed recipe for Seoritae Kongjaban, a beloved Korean side dish that perfectly complements rice. Using Baek Jong Won’s golden ratio, you can easily make these chewy, glossy, and savory black soybeans at home. They are truly addictive!

First, prepare 1 cup of Seoritae soybeans. Cover them with plenty of water and let them soak for at least 2 hours. Soaking them well ensures the beans become tender and absorb the seasoning thoroughly. Place the soaked soybeans in a pot and add 2 cups of water. Now, add all the prepared seasoning ingredients to the pot and let everything simmer together. For soaked beans, simmer over medium heat for about 10 to 15 minutes.

Here’s the golden ratio for the seasoning! Add 4 tablespoons of soy sauce, 2 tablespoons of sugar, and 4 tablespoons of mirin (rice wine). The basic ratio recommended by Baek Jong Won for Seoritae Kongjaban is soy sauce:sugar:mirin = 1:1:1. I’ve added 1 tablespoon of corn syrup to enhance the glossiness and slightly adjust the sweetness. Feel free to adjust the amount of sugar or corn syrup according to your preference.

As the beans are simmering, skim off any foam that rises to the surface with a spoon. This step helps to create a cleaner sauce and remove any unwanted flavors. When you notice that most of the liquid has been reduced and there isn’t much sauce left, lower the heat to low. From this point on, stir constantly to prevent the beans from sticking or burning, allowing them to become glossy and perfectly cooked. This will result in delicious Seoritae Kongjaban.
