First, wash the chives thoroughly and pat them dry. Then, chop them into bite-sized pieces, about 1 to 1.5 cm long, and place them in a large bowl. The fresh aroma of chives will enhance the pancake’s flavor.

Open the Spam can. You can either scrape it out with a spoon or dice it into small cubes, and add it to the bowl with the chives. The salty and savory taste of Spam will add a wonderful dimension to the chive pancake.

Crack the 2 fresh eggs into the bowl. Add 3 tablespoons of pancake mix and a pinch of salt for seasoning. You can use all-purpose flour instead of pancake mix, but pancake mix will give you a crispier texture.
