Main Ingredients- 1 can (200g) Spam
- 4 large eggs
- 1.5 cups cooked rice
- 1 stalk green onion
- 1/4 medium onion

Step 1
First, prepare the egg mixture. Crack 4 large eggs into a bowl. Finely chop the green parts of 1 green onion and add them to the bowl. Season with a pinch of salt and black pepper, then whisk everything together thoroughly until smooth. This will make the eggs softer and more flavorful.
Step 2
Cut the Spam into bite-sized pieces, or for a more crumbly texture when fried, place it in a plastic bag and mash it with your hands. Use the entire 200g can of Spam.

Now, let’s prepare the vegetables to enhance the flavor of the fried rice. Add the mashed Spam to a pan, along with 1 Tbsp of minced garlic. Finely chop the white parts of the green onion and add them, along with 1/4 finely diced medium onion. Sautéing the vegetables in the Spam fat will make the fried rice even more savory.

Heat the pan over medium heat and stir-fry the Spam and vegetables together. Cook until the Spam is golden brown and fragrant, and the vegetables become translucent. During this process, the Spam fat will render out, adding delicious umami to the fried rice.

Once the Spam and vegetables are nicely sautéed, pour in the prepared egg mixture. The egg will start to cook around the edges of the pan.

As the eggs begin to set into soft curds, gently stir them with chopsticks or a spatula, like making scrambled eggs. Avoid breaking them up too much; the key is to mix them gently into the Spam and vegetables.

When the eggs are about 80% cooked, add 1.5 cups of warm cooked rice to the pan. Use chopsticks to break up any clumps of rice and stir-fry everything together until well combined. It’s important to break up the rice so it doesn’t clump. Continue stir-frying over medium heat until the rice grains are slightly crispy and separated.
Step 8
Finally, stir in 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds, and give it a final quick stir. Your delicious Spam and Egg Fried Rice is ready! Turning off the heat before adding the sesame oil and seeds helps preserve their fragrant aroma.
