Main Ingredients

  • 2 bowls of warm cooked rice
  • 1 can of Spam (sliced)
  • 2 fresh eggs
  • 1/2 sweet onion (thinly sliced)

Special Sauce

  • 4 Tbsp soy sauce
  • 1 Tbsp sugar
  • 2 Tbsp mirin (sweet rice wine)
  • 1 cup water (approx. 200ml)

Cooking Instructions

Step 1

First, wash the fresh half onion and thinly slice it. Sliced onions will add a tender texture when simmered in the sauce.

Open the can of Spam and remove the contents. Then, slice it thinly so it looks appealing on top of the rice bowl. Thinly sliced Spam absorbs the sauce better, making it even tastier.

Crack the 2 fresh eggs into a clean bowl. Gently whisk them with a fork or whisk until the yolks and whites are well combined. Removing the chalaza (the stringy white part) will result in a cleaner egg mixture.

In a small pot or saucepan, combine 4 Tbsp soy sauce, 1 Tbsp sugar, 2 Tbsp mirin, and 1 cup of water (approximately 200ml). Mix well and bring to a boil over medium heat. This will create your delicious Spam rice bowl sauce.

While the sauce is simmering, heat a pan and add the thinly sliced Spam. Pan-fry it until it’s lightly golden brown on both sides. The rendered Spam fat will add wonderful flavor. (If there’s too much fat, you can gently blot it with a paper towel.)

Once the sauce begins to boil, add the pre-sliced onions to the pan. Cook them together until the onions become translucent.

When the onions are softened, add the nicely fried Spam back into the pan. Let it simmer together for about 1-2 more minutes. This step allows the Spam to absorb the flavors of the sauce.

Now, reduce the heat to low. Slowly drizzle the beaten egg mixture around the edges of the pan. Cook for about 30-40 seconds, just enough to achieve a soft-boiled or runny yolk consistency. Cooking it briefly is key to keeping the eggs moist.
