Main Ingredients- Mixed Spam, 1 cup (using a paper cup as a measure)
- Well-fermented Kimchi, 1 cup (using a paper cup as a measure)
- Bean Sprouts, 1 handful
- Tofu, 1/2 block
Cooking Instructions
Step 1
First, cut the mixed spam into bite-sized pieces, about 1cm thick. If you’re using frozen spam, it’s best to thaw it before proceeding.

Chop the kimchi into manageable pieces. You can adjust the amount based on how sour your kimchi is.

Place the chopped spam and kimchi into a pot. Add enough rice water (or anchovy broth, or plain water) to cover the kimchi. Using rice water will give the broth a richer, more savory flavor.

Dice the tofu into cubes and add it to the pot. (Tip: If you prefer softer tofu, you can add it in step 7).

Now it’s time to add the seasonings. Add 1/2 tablespoon of minced garlic.

Add 1 tablespoon of gochugaru for a spicy kick. Adjust the amount according to the spiciness of your kimchi.

Add 1 tablespoon of sugar to mellow out the sourness of the kimchi and enhance its umami.
