Main Ingredients- Spam 200g (approx. 1 small can)
- 2 Onions (medium size)
- 3 Korean Green Chilies (Cheongyang Peppers)
Seasoning- 1 Tbsp Oyster Sauce
- 1 Tbsp Soy Sauce
- 1 Tbsp Corn Syrup or Oligosaccharide
- 1 Tbsp Sesame Oil
- A pinch of Sesame Seeds
- 1 Tbsp Oyster Sauce

Cooking Instructions
Step 1
First, prepare all the ingredients for the dish. We’re using about 200g of Spam, which is roughly one small can.

Step 2
Before slicing the Spam, briefly immerse it in hot water. This helps to remove some of its characteristic oiliness, resulting in a cleaner and more mellow flavor. Soak for about 1 minute then remove.

Step 3
Pat the Spam dry with paper towels after removing it from the hot water, pressing lightly to absorb any remaining moisture. This step prevents oil splattering while cooking and stops the Spam from sticking to the pan.

Step 4
Slice the prepared Spam into bite-sized strips. Aim for strips that are not too thick, as this allows the seasoning to penetrate better and provides a pleasant texture. Slicing them about 0.7cm thick is ideal.

Step 5
Remove the stems from the Korean green chilies, deseed them, and then julienne them into long, thin strips. If you enjoy a spicier taste, you can leave some seeds in. However, if cooking for children, it’s best to remove the seeds.

Step 6
Peel and wash the onions, then slice them into thick strips. If you cut them too thinly, they can become mushy when stir-fried. Cutting them about 0.5cm thick helps maintain a nice texture.

Step 7
Heat a pan over medium heat without adding any oil. Add the sliced Spam and stir-fry until it’s lightly browned. The Spam will release its own fat, so no extra oil is needed. Stir-frying the Spam first helps render out excess fat, making the final dish less greasy.

Step 8
In the same pan where you fried the Spam, add a little oil if needed, and then add the sliced onions. Stir-fry the onions until they become translucent. Cooking them over medium-low heat slowly will bring out their natural sweetness effectively.

Step 9
Once the onions start to turn transparent, add 1 tablespoon of oyster sauce and stir-fry everything together. The oyster sauce adds a wonderful umami depth to the onions.

Step 10
Add the previously stir-fried Spam and the julienned green chilies back into the pan. Stir-fry them with the onions. Next, add 1 tablespoon of soy sauce and continue to stir-fry until the ingredients are well combined with the sauce.

Step 11
Finally, add 1 tablespoon of corn syrup (or oligosaccharide) for a touch of sweetness. Stir-fry quickly until the mixture is glossy. Corn syrup adds a deeper, richer flavor.

Step 12
Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for extra aroma. Transfer the finished Spam and Onion Stir-Fry to a serving dish and sprinkle with sesame seeds.
