Main Ingredients- 1 can Spam (approx. 200g)
- 2 medium potatoes
- 1/2 onion
- 1/2 green onion (scallion)
- 1 Korean chili pepper (optional, for spiciness)
- 2 Tbsp cooking oil
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, prepare your ingredients. Peel the potatoes and cut them into thin matchsticks, about 0.3 cm thick. Thinly slice the green onion and the Korean chili pepper (if using). Slice the onion thinly as well. Cut the Spam into slightly thicker matchsticks than the potatoes for a better texture.
Step 2
Rinse the julienned potatoes in cold water 2-3 times to remove excess starch. This step prevents the potato sticks from clumping together and ensures a cleaner stir-fry. Drain the potatoes thoroughly in a colander.
Step 3
Heat a non-stick pan over medium heat and add 2 tablespoons of cooking oil. Add the drained potato sticks and stir-fry until they start to turn slightly translucent.
Step 4
If you prefer your potatoes extra tender and want to speed up the cooking process, add 1/3 cup of water at this stage, cover the pan, and let it steam for 2-3 minutes until the potatoes are almost cooked through.
Step 5
Once the potatoes are nearly tender, add the sliced onion, green onion, and Korean chili pepper to the pan. Stir-fry until the raw pungent smell of the onion and green onion disappears and they become slightly translucent. Avoid overcooking, as it can make the vegetables mushy.
Step 6
Add the julienned Spam and stir well to combine all the ingredients. Spam is already seasoned, but taste the mixture and add a pinch of salt if needed. The saltiness of the Spam might be sufficient on its own, so be sure to check the seasoning before adding more salt.
Step 7
Finally, just before turning off the heat, drizzle in 1 tablespoon of sesame oil and sprinkle 1 tablespoon of toasted sesame seeds for a glossy finish and nutty aroma. Your delicious Spam and Potato Stir-Fry is ready to be enjoyed with a bowl of hot rice!
