Main Ingredients
  • 300g Quail Eggs (using pre-shelled eggs is convenient)
  • 200g Spam (about half a can)

Braising Sauce
  • 6 Tbsp Soy Sauce
  • 1 Tbsp Oligodang (for shine and sweetness)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced Garlic (or 2 whole cloves)
  • 1 Tbsp Cooking Wine (Mirin) (to remove gamey odor)
  • 1 Tbsp Sesame Oil
  • A pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

Using pre-shelled quail eggs makes cooking much more convenient as it saves the time and effort of boiling and peeling. If you need to boil and peel them yourself, prepare about 30 quail eggs, which will amount to approximately 300g.

Step 2

Cut the Spam into bite-sized cubes. Avoid cutting them too thinly, so they retain their texture after braising and don’t break apart.

Step 3

In a wide pot, combine the quail eggs and the cubed Spam. Add 1 Tbsp sugar, 6 Tbsp soy sauce, and 1 Tbsp cooking wine. Mix gently to coat the ingredients with the sauce.

Step 4

Add 1 Tbsp of minced garlic. If you dislike the appearance of minced garlic floating in the sauce, you can use 2 whole garlic cloves (crushed or whole) to simmer along; they can be easily removed later and will impart a subtle garlic aroma. For a spicier kick, you can add one chopped chili pepper. To enhance the savory depth, adding a piece of dried kelp (kombu) while braising is also a great option. (Optional)

Step 5

Pour 1 cup (200ml) of water into the pot with the sauce ingredients. Bring to a boil over high heat, then reduce the heat to medium-low and let it simmer gently. Gently shake the pot or stir occasionally with a spatula to ensure the sauce evenly coats the quail eggs and Spam.

Step 6

Once the braise has reached your desired consistency, turn off the heat. Stir in 1 Tbsp of oligodang and 1 Tbsp of sesame oil for added glossiness and aroma. Finish by sprinkling some toasted sesame seeds and mixing well. Your delicious Spam and Quail Egg Soy Braise is ready!
