Ingredients
  • 200g Spam (about 1/2 can)
  • 1.5 onions
  • 1 potato
  • 1/5 carrot (large carrot)
  • 1/3 zucchini
  • 1 packet curry powder
  • 800ml water

Cooking Instructions

Step 1

First, prepare the vegetables that will add rich flavor to your curry. Dice the onion into 1cm pieces. Cut the carrot and zucchini into similarly sized pieces. Cutting the vegetables into uniform sizes helps them cook evenly.

Step 2

Peel the potato and dice it into 1.5cm cubes. Soak the diced potatoes in cold water for about 10 minutes to remove excess starch. Removing potato starch results in a clearer, cleaner curry that is less likely to clump when simmering. Drain thoroughly and set aside.

Step 3

Dice the Spam into 1.5cm cubes. To reduce its saltiness and greasiness, blanch the Spam in boiling water for 1-2 minutes. If oil floats to the surface, rinse it under cold water and pat dry with paper towels for a cleaner result.

Step 4

Pre-dissolving the curry powder prevents lumps and ensures a smooth curry. In a small bowl, mix 1 packet of curry powder with 100ml of water until completely smooth. If there are any lumps, use a chopstick to break them up.

Step 5

The foundation of a deep and flavorful curry starts with sautéing onions! Heat 1-2 tablespoons of cooking oil in a pot or deep pan over medium-low heat. Add the diced onions and sauté for about 3-4 minutes until they become translucent. Thoroughly sautéing the onions brings out their sweetness and depth of flavor.

Step 6

Once the onions turn translucent, add the carrots and potatoes (which are harder vegetables) and sauté together for 2-3 minutes. When the outer surface of the carrots and potatoes starts to look slightly cooked and translucent, add the blanched Spam and sauté for another minute to enhance the flavor.

Step 7

Now, add the zucchini and sauté briefly. Pour in all 700ml of the prepared water. Turn the heat to high and bring it to a boil.

Step 8

As the water begins to boil, skim off any foam that rises to the surface using a ladle. Removing impurities results in a cleaner and tastier curry. After skimming, cover the pot, reduce the heat to medium, and simmer for 5 minutes to cook the ingredients.

Step 9

After 5 minutes, remove the lid and check if the potatoes are fully cooked by piercing them with a chopstick. Once the potatoes are cooked, pour in the pre-dissolved curry mixture. Stir thoroughly with a spatula, scraping the bottom, to ensure there are no clumps. Simmer until the curry thickens slightly. Your delicious Spam curry is ready! Serve hot over rice and enjoy.
