Whip up a delicious pancake using leftover vegetables and Spam from your fridge. The chewy enoki mushrooms, savory Spam, and soft silken tofu come together in a delightful texture that’s loved by everyone, from kids to adults. This simple recipe makes for a satisfying meal or a perfect accompaniment to drinks.
Main Ingredients- 1 pack Enoki mushrooms
- 1 can Spam (115g)
- 2 Cheongyang peppers (Korean chili peppers)
- 1 Red chili pepper
- 2 Tbsp Carrot (finely minced)
- 2 Tbsp Onion (finely minced)
- 2 Tbsp Scallion (finely minced)
- 1/2 block Silken tofu
Batter Ingredients- 3 Eggs
- 4 Tbsp All-purpose flour
- 3 Eggs
- 4 Tbsp All-purpose flour
Cooking Instructions
Step 1
1. Trim the base of the enoki mushrooms and chop them into approximately 1cm lengths. 2. Finely mince the carrot, onion, and scallion, preparing about 2 tablespoons of each. 3. Slice the Cheongyang and red chili peppers in half lengthwise, remove the seeds, and then finely mince them. (If you prefer less heat, remove all seeds.)
Step 2
1. Pour hot or cold water over the Spam to rinse off excess grease and gelatinous residue. This step results in a cleaner flavor. 2. To make mashing easier, dice the Spam finely or place it in a plastic bag and gently pound it with the back of a knife. 3. Drain any excess water from the silken tofu, then mash it gently with a fork or spoon until smooth.
Step 3
In a large bowl, combine the prepared enoki mushrooms, minced vegetables, mashed Spam, and mashed silken tofu. Crack in the 3 eggs.
Step 4
Add the 4 tablespoons of all-purpose flour evenly over the ingredients. Mix everything together using a spatula or spoon, mashing the ingredients as you combine them to form a batter. If the batter is too thin, add a little more flour; if it’s too thick, add another egg to reach the desired consistency.
Step 5
Heat a lightly oiled pan over medium heat. Scoop spoonfuls of the batter and drop them into the pan, shaping them into round, flat pancakes. Avoid overcrowding the pan; leave some space between each pancake for even cooking.
Step 6
Once the bottom side of the pancake turns golden brown and the edges begin to lift slightly, carefully flip it using a spatula. To flip without disturbing the shape, you can place a plate over the pancake, invert the pan and plate together, then slide the pancake back into the pan.
Step 7
After flipping, cook the other side until it is also golden brown.
Step 8
Once both sides are cooked, gently press down on the pancakes with the spatula. This ensures that the inside is cooked through and the pancakes become extra crispy.
Step 9
Arrange the golden-brown Spam and enoki mushroom egg pancakes on a serving plate. Enjoy your delicious creation! You can also serve it with ketchup or soy sauce for dipping, according to your preference.
