An Easy and Healthy Diet Bento Box: Scrambled Spam Kimchi Fried Rice
I’m currently in my third week of dieting and have recently resumed playing janggu, an activity I paused due to COVID-19. This means I pack my lunch on days I have janggu practice. Since the portions are about one-third of a regular meal, it’s too small to buy elsewhere and eating out is inconvenient. The diet lunch boxes I used to buy required microwaving, which is a hassle and impossible in some situations. So, I realized I had to make my own meals for days without microwave access. Packing a diet lunch box turned out to be quite simple! Once I understood that it’s just a matter of filling a container with the right amount of rice and side dishes, I decided to pack my own for the first time. I made a simple bento with scrambled eggs and spam kimchi fried rice. Honestly, it tasted 100 times better than the store-bought ones! I’ll be making my own bento boxes until my diet ends. Main Ingredients- 3 bowls of multigrain rice
- 1 cup kimchi (well-fermented is recommended)
- A small amount of Spam (about 1/4 can, adjustable to taste)
- 3 eggs
- 3 Tbsp water (for cooking rice)
Seasoning & Others- Olive oil
- 1 tsp oyster sauce
- 5 Tbsp kimchi juice
- Pinch of salt (for seasoning eggs)

Cooking Instructions
Step 1
First, crack the 3 eggs into a bowl. Season them with a pinch of salt and whisk well until fully combined. Removing the egg whites’ stringy parts will result in a smoother scrambled egg.
Step 2
Heat a non-stick pan over medium heat and add a little olive oil. Carefully pour the whisked egg mixture into the pan, tilting it to spread thinly across the surface.
Step 3
Before the egg is fully cooked, gently stir with chopsticks or a spatula to create soft, fluffy scrambled eggs. Be careful not to break them down too finely. Once cooked, transfer the scrambled eggs to a separate plate.
Step 4
Chop the kimchi into bite-sized pieces (about 1cm). Dice the Spam into similar-sized cubes. Imagine the delicious fried rice you’re about to make as you prepare these ingredients!
Step 5
Add 1-2 tablespoons of olive oil to the pan or wok you’ll use for the fried rice. Add the chopped kimchi and stir-fry over medium heat until softened. Stir-frying the kimchi until tender will enhance its flavor significantly.
Step 6
Once the kimchi is well-fried, add the diced Spam and stir-fry together until the Spam is lightly browned. Then, add the 3 bowls of multigrain rice, breaking up any clumps. Pour in the 5 Tbsp kimchi juice and 1 tsp oyster sauce. Increase the heat to high and stir-fry quickly until all ingredients are well combined and the rice grains are separated. Stir-frying until the rice is fluffy and distinct is key.
Step 7
Top the fried rice with the prepared scrambled eggs and gently mix them in. Transfer the finished fried rice to your prepared diet bento box. Your delicious and healthy lunch is ready! It can be enjoyed warm or cold.
