Stew Ingredients
  • 1 can (340g) Spam
  • 1 piece aged kimchi (about 1/4 cabbage)
  • 1 ladle kimchi brine (about 1/2 cup)
  • 1/2 medium onion
  • 1/2 stalk green onion
  • 1 Korean chili pepper (optional)

Broth and Seasoning
  • 800ml water (about 4 cups)
  • 2 Tbsp tuna extract (or fish sauce)
  • A little anchovy sauce or soy sauce (for seasoning)

Cooking Instructions

Step 1

First, prepare the vegetables for the stew. Slice the green onion diagonally. Cut the onion into thin strips. If you like a bit of heat, slice the Korean chili pepper diagonally as well.

Step 2

Chop the well-fermented kimchi into bite-sized pieces (about 2-3cm). Place the chopped kimchi into a pot. Add 1 ladle of kimchi brine; this will add a deep umami flavor to the stew.

Step 3

You can lightly rinse the Spam under lukewarm water to reduce its saltiness. Cut the Spam into similar bite-sized pieces as the kimchi and add it to the pot.

Step 4

Now, pour 800ml of water into the pot. The amount of water should be enough to mostly cover the ingredients.

Step 5

Add 2 tablespoons of tuna extract for extra savory flavor. Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 10-15 minutes until the kimchi is tender and the broth is deeply flavored.

Step 6

Once the kimchi is sufficiently cooked, add the prepared green onions and onions to the pot. Continue to boil for a little longer. The stew is even tastier when the onions become translucent, releasing their sweetness.

Step 7

Finally, adjust the seasoning. Taste the broth and add a little anchovy sauce or soy sauce to suit your preference. If desired, you can also add 1/2 Tbsp of minced garlic for extra flavor. Once all the ingredients are well combined, your delicious Spam Kimchi Stew is ready!
