Stew Ingredients
- 1 can (340g) Spam
- 1 piece aged kimchi (about 1/4 cabbage)
- 1 ladle kimchi brine (about 1/2 cup)
- 1/2 medium onion
- 1/2 stalk green onion
- 1 Korean chili pepper (optional)

- 800ml water (about 4 cups)
- 2 Tbsp tuna extract (or fish sauce)
- A little anchovy sauce or soy sauce (for seasoning)

Cooking Instructions
Step 1
First, prepare the vegetables for the stew. Slice the green onion diagonally. Cut the onion into thin strips. If you like a bit of heat, slice the Korean chili pepper diagonally as well.

Chop the well-fermented kimchi into bite-sized pieces (about 2-3cm). Place the chopped kimchi into a pot. Add 1 ladle of kimchi brine; this will add a deep umami flavor to the stew.

You can lightly rinse the Spam under lukewarm water to reduce its saltiness. Cut the Spam into similar bite-sized pieces as the kimchi and add it to the pot.

Now, pour 800ml of water into the pot. The amount of water should be enough to mostly cover the ingredients.
