Main Ingredients

  • 1/4 head ripe kimchi (about 300g), cut into bite-sized pieces
  • 1 block tofu (about 300g), cut into cubes
  • 1 small can Spam (about 200g), cut into cubes
  • 1/2 stalk green onion
  • 1 red chili pepper (optional, adjust to taste)
  • 4 cups anchovy-kelp broth (about 800ml)

Seasoning & Stir-fry Ingredients

  • 1 Tbsp cooking oil
  • 1 Tbsp gochugaru (Korean chili powder)
  • 1 Tbsp sugar
  • 1/2 cup kimchi juice (about 100ml)
  • 1 cup additional anchovy-kelp broth (about 200ml)

Cooking Instructions

Step 1

First, prepare the ingredients. Shake off excess kimchi brine and cut the kimchi into bite-sized pieces, about 2-3 cm. Finely slice the green onion and chili pepper. Cut the tofu and Spam into cubes roughly the same size as the kimchi for a visually appealing stew.

Step 1

Step 2

Heat a deep pot or wok over medium heat. Add 1 tablespoon of cooking oil and then add the cut kimchi. Sprinkle in 1 tablespoon of gochugaru.

Step 2

Step 3

Add 1 tablespoon of sugar to the pot and stir-fry the kimchi for about 2-3 minutes, until it becomes slightly translucent and fragrant. This step mellows the sourness of the kimchi and enhances its umami flavor. If your kimchi is very sour, you can add a little more sugar.

Step 3

Step 4

Once the kimchi is nicely stir-fried, pour in 1/2 cup of kimchi juice. This juice adds a deep, rich flavor to the stew.

Step 4

Step 5

Next, add the additional 1 cup of anchovy-kelp broth. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 5 minutes, allowing the kimchi flavor to infuse into the broth.

Step 5

Step 6

Now, pour in the main portion of the broth: 4 cups of anchovy-kelp broth. Using enough broth is key to preventing the stew from tasting bland and ensuring a rich flavor.

Step 6

Step 7

Once the broth comes to a simmer, add the cubed tofu and Spam. Arrange them nicely in the pot. If you prefer less oil from the Spam, you can blanch it in hot water before adding it to the stew.

Step 7

Step 8

Cover the pot and reduce the heat to medium-low. Let the stew simmer gently for at least 50 minutes to 1 hour. This slow cooking allows the flavors of the kimchi and Spam to meld beautifully, creating a deep and satisfying taste. You can lift the lid to stir occasionally, about once or twice during cooking.

Step 8

Step 9

Towards the end of the cooking time, add the sliced green onion and chili pepper. Simmer for a few more minutes until the aromatics are fragrant. This adds a fresh herbal note and a touch of heat. Taste the stew and adjust seasoning if needed. You can add more kimchi juice or a pinch of salt if it’s not salty enough.

Step 9

Step 10

Your delicious Spam Kimchi Stew is now ready! Enjoy it with a warm bowl of rice. ^^
