Hello everyone, this is Henri’s Big Sister! Today’s question is, “What should we eat?” I recently bought some Spam, which I usually avoid because it’s expensive, and it caught my eye. I usually buy cheaper ham similar to Spam, but this time I bought the real deal after a long time.

I used the term “genuine Spam” because I remembered a news report about a customer who ordered a dish advertised as “Spam” but it didn’t contain actual Spam, leading to a request to reserve the word “Spam” only for establishments using it.

And honestly, don’t most restaurants use ham similar to Spam instead of actual Spam? It’s almost twice as expensive, right?

Seeing this Spam reminded me of the Spam Mayo Rice Bowl from Shinjeon Tteokbokki. So, I decided to make it! Enjoy this delicious and easy recipe!

Main Ingredients

  • 1 (340g) can of Spam
  • 2 large eggs
  • Mayonnaise, for drizzling
  • 4 Korean green chili peppers (Ggwari-gochu)
  • Seasoned seaweed flakes, for garnish
  • Green onions, chopped, for garnish

Cooking Instructions

First, dice the Spam into small, 1cm cubes, resembling Korean rice cakes (kkakdugi).

Crack the eggs into a bowl. Season with a pinch of salt and a dash of black pepper, then whisk well until thoroughly combined.

Heat a lightly oiled pan over medium heat. Pour in the whisked egg mixture to create a thin omelet. Once cooked through, remove from the pan and let it cool completely. Once cooled, thinly slice the omelet into strips. Slicing it while cool prevents it from breaking apart.

In a separate pan, add the diced Spam and stir-fry until golden brown and slightly crispy. Spam releases quite a bit of fat, so periodically drain the excess oil with a paper towel as you cook for a less greasy result.

Once the Spam is nicely fried and the excess oil is removed, set it aside along with the thinly sliced egg omelet strips.

Now, let’s make the delicious soy sauce glaze. In a small saucepan, combine 1/3 cup of soy sauce and 1/3 cup of water.

Add 2 tablespoons of oligosaccharide (or your preferred sweetener like corn syrup or honey) for a touch of sweetness.

Wash the Korean green chili peppers, remove the stems, and finely mince them. Sometimes, Spam mayo bowls can feel a bit rich. Adding minced chili peppers here adds a subtle spicy kick and aroma that cuts through the richness, enhancing the overall flavor. I’m using milder Ggwari-gochu today, but you can use Cheongyang peppers for more heat. The subtle chili fragrance makes it incredibly delicious!

Add the minced chili peppers to the soy sauce mixture and bring to a simmer over medium-low heat. Continue to cook until the sauce has reduced by about half. Your flavorful soy sauce glaze is now ready.
