  • 1/4 block Enoki mushrooms
  • 20g Carrot
  • 1/2 Red bell pepper
  • 1/2 Cheongyang chili pepper (optional, for a bit of heat)
  • 4-5 Eggs
  • 4-5 Tbsp All-purpose flour (or pancake mix)

  • Pinch of black pepper
  • Sunflower oil (or cooking oil) as needed

Prepare the Spam by briefly blanching it in boiling water for about 1 minute. This step helps remove excess grease and impurities, resulting in a cleaner taste.

Slice the blanched Spam into approximately 1cm thick rounds. Carefully use a knife to cut a square or round hole in the center of each slice, being careful not to cut all the way through to the edges. Leaving a thick enough border is crucial to prevent the Spam from breaking apart during cooking.

Finely mince the Enoki mushrooms, removing the base. Dice the carrot, red bell pepper, and Cheongyang chili pepper (seeds removed) into very small pieces. These finely chopped ingredients will be mixed into the batter. (Feel free to use any leftover vegetables or mushrooms you have on hand.)

In a bowl, combine the minced Enoki mushrooms, carrot, red bell pepper, and Cheongyang chili pepper. Add 4-5 eggs, 4-5 tablespoons of all-purpose flour, 1 teaspoon of salt, and a pinch of black pepper. No additional water is usually needed at this stage.

Using a spoon or spatula, mix and combine all the ingredients thoroughly. Allow the mixture to sit for about 5-10 minutes. The mushrooms and vegetables will release their moisture, creating a batter that is moist and not too stiff. (Adjust the amount of flour if the mixture seems too wet or too dry.)

Lightly grease a heated pan with sunflower oil. Place the hollowed-out Spam slices onto the pan. Lightly dust the cut-out center of the Spam with some flour. Then, using a spoon, carefully fill the hollowed center of each Spam slice with about one-quarter of the prepared batter. Avoid overfilling. Cook over medium-low heat; this allows the Spam and batter to cook through evenly without burning.
