Kimchi Tteokgalbi Ingredients
  • 600g finely minced lean beef (or beef short rib meat)
  • 350g well-fermented napa cabbage kimchi, finely chopped and squeezed dry
  • 150g fresh bean sprouts
  • 70g fresh Korean chives (buchu)
  • 100g cherry tomatoes, thinly sliced
  • 2 Tbsp pear juice
  • 1 Tbsp onion juice
  • 1.5 Tbsp soy sauce
  • 1 Tbsp cooking wine (cheongju)
  • 1 Tbsp minced garlic
  • 2 Tbsp chopped green onions
  • 2 Tbsp glutinous rice flour
  • 1 Tbsp honey
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil
  • A pinch of black pepper, to taste

Cooking Instructions

Step 1

1. Finely mince the lean beef (or short rib meat). Place the minced beef on paper towels and gently press to remove excess blood. This step is crucial for a clean, non-gamey flavor.

Step 2

2. In a bowl, combine all the meat seasoning ingredients: pear juice, onion juice, soy sauce, cooking wine, minced garlic, chopped green onions, glutinous rice flour, honey, toasted sesame seeds, sesame oil, and pepper. Add the drained minced beef to the seasonings and knead thoroughly until it forms a cohesive, sticky mixture, similar to dough. This ensures the tteokgalbi holds its shape and has a pleasant texture.

Step 3

3. For the tteokgalbi filling, take 200g of kimchi. Remove any excess filling (if applicable), squeeze out as much moisture as possible, and chop it finely. Mix the chopped kimchi with 1 Tbsp sugar and 1 Tbsp sesame oil, letting it marinate briefly.

Step 4

4. Combine the meat mixture from step 2 and the seasoned kimchi from step 3. Divide the mixture into bite-sized portions (about 50g each) and shape them into small, flat patties. Forming them into uniform sizes will ensure even cooking.

Step 5

5. Heat a pan over medium-high heat with a little oil. Sear the tteokgalbi patties on both sides for about 1-2 minutes per side. This quick sear helps to seal in the juices, keeping the tteokgalbi moist. Transfer the seared patties to a preheated oven at 190°C (375°F) and bake for 10-12 minutes, or until cooked through and lightly browned. Adjust baking time based on your oven.

Step 6

6. Prepare the vegetables: Trim the tough ends of the bean sprouts. Cut the Korean chives into approximately 3cm lengths. Thinly slice 150g of kimchi along the grain for the stir-fry. Having your vegetables prepped makes the cooking process smoother.

Step 7

7. In a clean pan, heat 1 Tbsp of grapeseed oil over medium-high heat. Add the sliced kimchi (for stir-frying) and bean sprouts, stir-frying them quickly. Add the stir-fry seasoning ingredients (1 tsp oyster sauce, 1 tsp sugar, 1 tsp sesame seeds, 1 Tbsp plum extract) and mix well. Finally, add the Korean chives and stir-fry for just a few seconds until they are slightly wilted but still crisp. Set aside.

Step 8

8. Prepare the mustard sauce: In a small bowl, whisk together 1 Tbsp vinegar, 1 Tbsp sugar, 1 Tbsp prepared mustard, and 1 Tbsp dashi stock until well combined. This sauce will add a zesty kick to the canapés.

Step 9

9. Arrange the baked beef tteokgalbi on a serving platter. Top each tteokgalbi with a spoonful of the crisp vegetable stir-fry from step 7. Garnish with the thin slices of cherry tomato from step 9.
