Special Pad Thai Sauce Fried Rice

Main Ingredients- 3 fresh eggs
- 2 small pieces of carrot, finely diced (approx. 20g)
- 1 thin slice of zucchini, thinly sliced (approx. 30g)
- 1/4 onion, minced (approx. 30g)
- 2.5 bowls of cooked rice (approx. 500g)
- 2 slices of Spam, diced (approx. 100g)
Pad Thai Seasoning- Pinch of salt (to taste)
- 1 Tbsp granulated sugar
- 6 Tbsp Pad Thai sauce (store-bought)
- Sesame seeds, for garnish

Cooking Instructions
Step 1
Heat a generous amount of cooking oil in a wide pan or wok over medium heat. Crack in the 3 eggs, sprinkle with 1 Tbsp sugar and a pinch of salt. Scramble the eggs until fluffy, then set aside. In the same pan, add the finely diced carrots and 3 Tbsp of water. Cook until the carrots are tender. Stir in 1 Tbsp of Pad Thai sauce and cook together to infuse the flavor.
Step 2
Add the thinly sliced zucchini and minced onion to the pan. Sauté until fragrant and they become slightly translucent. Stir in 2 Tbsp of Pad Thai sauce and cook with the vegetables. Add the 2.5 bowls of warm cooked rice and the diced Spam. Pour in the remaining 3 Tbsp of Pad Thai sauce. Using a spatula, break up any clumps of rice and stir-fry for about 2-3 minutes until all ingredients are evenly combined and heated through.
Step 3
Add the prepared scrambled eggs back into the pan with the rice. Sprinkle with a pinch of sesame seeds for garnish. Gently mix everything together with the spatula so the scrambled eggs and rice are well incorporated. Turn off the heat and serve the fried rice in a bowl.
