Rice

  • 2 cups rice
  • 2 Tbsp sesame oil

Topping Ingredients

  • 240g pork neck
  • Kimchi
  • 2 eggs
  • 1/2 block ham
  • 3 rice paper sheets
  • 1 perilla leaf

Seasoning

  • 1/2 Tbsp salt
  • 1/2 Tbsp black pepper

Cooking Instructions

Step 1

First, prepare the filling ingredients. Dice the ham, kimchi, and pork into small, bite-sized pieces (about 1cm). If you are using fish cakes, cut them into quarters. (If you have chili peppers, you can also chop them to a similar size.)

Prepare the rice and stir-fry the filling ingredients. Mix 2 cups of rice with 2 tablespoons of sesame oil thoroughly. Lightly oil a pan and stir-fry the diced pork, ham, and kimchi (plus any optional chili peppers) together until the pork is fully cooked and the kimchi’s moisture has evaporated. If using fish cakes, pan-fry them until golden brown without adding oil.

Shape the rice into individual portions. If you have a sushi rice mold, use it, or form the rice into small, sushi-like shapes by hand. It’s best to shape them without pressing too hard, so the rice grains remain distinct.

Top the shaped rice with the prepared fillings. Place your chosen toppings, such as the stir-fried pork, ham, or kimchi, one by one onto the shaped rice. If using perilla leaves, place a leaf on the rice before adding other toppings for an aromatic touch.

Make the kimbap rolls using rice paper. Prepare a wide bowl with hot water. Cut a rice paper sheet in half and briefly dip it into the hot water until softened. Layer the prepared rice, toppings, and fish cakes (if using) sequentially onto the softened rice paper and roll it up tightly. Try making various combinations for different flavors!

Lightly pan-fry for enhanced flavor. Thread the completed rice paper rolls onto skewers. Lightly oil a pan or wipe it with a paper towel, then place the skewer kimbap rolls on it. Pan-fry each side until lightly golden brown. This step enhances the chewy texture of the rice paper and the flavors of the fillings.

Make the egg garnish and finish the kimbap. Lightly beat 2 eggs and cook them into thin (about 1mm thick) omelets over low heat. Cut the cooked egg omelets to match the size of your sushi rice mold. Place the egg omelet onto the shaped rice, add your chosen fillings, and roll again. This step coats the kimbap with a visually appealing egg layer. Cut the finished rolls in half and skewer them individually.

Add kimchi kimbap and assemble the lunchbox. If you have leftover stir-fried kimchi, place it in the sushi mold, add rice, and roll it in the same manner to create kimchi kimbap skewers.
