Main Ingredients

  • 2 large eggs
  • 1-2 bowls of cooked rice (adjust to your preference)
  • Furikake (Japanese rice seasoning) or leftover vegetables from the fridge (e.g., finely chopped carrots, onions, scallions)

Cooking Instructions

Step 1

1. Crack 2 large eggs into a bowl and whisk them thoroughly with a fork or whisk until well combined. (Removing the chalaza will result in a smoother texture.)
2. Prepare your cooked rice. If using leftover rice, gently reheat it to prevent clumping during cooking.
3. Get your furikake ready, or if you have any leftover vegetables in the fridge, finely chop them. (If cooking for a baby, chop the vegetables very finely.)

Step 1

Step 2

1. Heat 1-2 tablespoons of cooking oil in a frying pan over medium-high heat. Pour in the whisked egg mixture.
2. As the egg begins to set, quickly stir it with chopsticks or a spatula to create soft scrambled eggs. Avoid overcooking; the eggs should remain slightly moist.

Step 2

Step 3

1. Push the scrambled eggs to one side of the pan and add the prepared rice to the empty space. Gently break up any clumps with your spatula as you stir-fry the rice.
2. Once the rice is heated through and slightly stir-fried, combine it with the scrambled eggs and continue to stir-fry everything together.
3. Add 1 tablespoon of oyster sauce for flavor and stir well to ensure it’s evenly distributed.
4. Finally, add your furikake or finely chopped vegetables and stir-fry for another minute to combine everything. Your delicious egg fried rice is ready! (When cooking for a baby, taste and adjust the amount of oyster sauce, or use a very minimal amount of salt if needed.)
