It might seem like a stir-fry, but we’ll show you how to make delicious braised potatoes super quickly and easily. The slightly chewy exterior and fluffy interior are simply delightful.

  • 2 potatoes
  • 1/4 onion
  • A small amount of carrot
  • Cooking oil

Seasoning

  • 1.5 Tbsp soy sauce
  • 0.5 Tbsp minced garlic
  • A little green onion (chopped)
  • 0.5 Tbsp corn syrup or maltose
  • Sesame oil
  • A little sesame seeds

Cooking Instructions

Step 1

First, peel the potatoes and cut them into bite-sized cubes. Place the cubed potatoes in a pot with plenty of water and boil them until they are tender when pierced with a fork. Once cooked, drain them in a colander. Heat a generous amount of cooking oil in a pan and add the drained potatoes. Stir-fry them until they are lightly golden brown. This step helps the potatoes absorb the sauce better and improves their texture.

Let’s prepare the simple ingredients and seasonings. For the main ingredients, you’ll need potatoes, onion, carrot, and green onion. For the seasoning, have soy sauce, minced garlic, corn syrup (or maltose), sesame oil, and sesame seeds ready. Slice the onion and carrot, and finely chop the green onion.

To the lightly fried potatoes, add 1.5 tablespoons of soy sauce and stir-fry quickly. Keep stirring to ensure the soy sauce coats the potatoes evenly, enhancing their savory flavor as they braise.

Now, add the prepared onion, carrot, minced garlic, and chopped green onion to the pan and stir-fry them together. After adding the vegetables, reduce the heat to low, cover the pan with a lid, and let it cook for about 3 minutes. Covering the pan allows the vegetables to release their moisture, preventing burning and keeping the ingredients moist as they braise. It’s a good idea to check occasionally to make sure nothing is sticking.
