First, soak the pork back ribs in cold water for about 10 minutes to remove any blood. Soaking helps eliminate gamey odors and results in a cleaner broth. In a pot, add enough water to cover the ribs, dissolve 1 Tbsp of doenjang, bring to a boil, then add the prepared pork ribs. Boil over high heat for about 30 minutes. This initial boiling is a pre-cooking step to remove impurities and any porky smell.

Step 2

After the pre-cooking, rinse the pork back ribs thoroughly under cold running water. Carefully clean off any residue or impurities stuck to the pot to ensure the broth remains clear and free of unwanted odors. Also, wash the pot you used for boiling.

Place the cleaned pork back ribs back into the pot. Arrange them nicely so that the seasoning can penetrate evenly between the bones.

Chop the prepared aged kimchi into large pieces and layer it evenly over the pork ribs. The crisp texture and tangy flavor of the aged kimchi will further deepen the stew’s taste. Don’t forget to add the kimchi juice for an even richer flavor.

Now, pour enough water into the pot to completely submerge all the ingredients. It’s important to add plenty of water from the start, as some will evaporate during cooking.

After simmering for approximately 1 hour and 30 minutes, taste the broth and adjust the seasoning by adding about 1 tsp of Dashida, or to your preference.
