Main Ingredients

  • 170g Anchovies (dried, suitable for stir-frying)
  • 2 handfuls Almonds (approx. 30-40g)
  • 5 Tbsp Cooking Oil

Sauce

  • 2 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Jocheong (rice syrup) (or corn syrup)
  • 1.5 Tbsp Mirin (cooking wine)
  • 1.5 Tbsp Low-Sodium Soy Sauce (or regular soy sauce)
  • 2 Tbsp Honey

Homemade Low-Sodium Soy Sauce (Optional)

  • 1 cup Brewed Soy Sauce
  • 1 cup Mirin
  • 2 pieces Dried Kelp (5cm x 3cm)

Cooking Instructions

Step 1

First, let’s prepare the delicious sauce for our anchovy stir-fry. In a wide bowl, combine 2 Tbsp gochujang, 3 Tbsp jocheong, 1.5 Tbsp mirin, and 1.5 Tbsp low-sodium soy sauce. Mix them well with a spoon until thoroughly combined. The jocheong will work with the honey to make the stir-fry tender and add a beautiful sheen.

Now it’s time to stir-fry the anchovies and almonds. Heat 5 Tbsp of cooking oil in a pan over medium-low heat. Once the pan is warm, add all the anchovies and almonds. Stir-fry them for 2-3 minutes, like deep-frying, being careful not to burn them. The anchovies should become crispy, and the almonds will release a nutty aroma.

Transfer the well-fried anchovies and almonds to a plate lined with paper towels to absorb any excess oil. This helps prevent the stir-fry from becoming greasy. Then, pour the prepared gochujang sauce into the same pan and bring it to a simmer over medium-low heat. Stir constantly as the sauce bubbles.

Once the sauce simmers, reduce the heat to very low or turn it off momentarily. Add the crispy anchovies and almonds back to the pan. Quickly toss them to coat evenly with the sauce. Make sure to mix well so the sauce doesn’t clump.
