Bean Sprout Rice Ingredients

  • 1 handful fresh bean sprouts (approx. 100g)
  • 1.5 cups soaked rice (300ml)
  • 100g daikon radish
  • A little beef (ground or for grilling) (approx. 50g)

Wild Chive Sauce Ingredients

  • 1 handful wild chives (approx. 50g)
  • 1/2 Tbsp minced green onion
  • 1/2 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 1/2 paper cup soy sauce (approx. 100ml)
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp toasted sesame seeds
  • 1 chili pepper (adjust to your spice preference)

First, wash the rice thoroughly. Adding a few pieces of dried kelp (dashima) while cooking the rice will enhance its flavor. Let the rice soak in water for about 30 minutes.

Slice the daikon radish into pieces slightly thicker than you would for seasoned radish salad (musaengchae) to ensure a better texture in your bean sprout rice. Place the soaked rice in your rice cooker. Add water just enough to cover the rice. Then, layer the bean sprouts and the sliced radish on top. Cook the rice. The bean sprouts and radish will release moisture, resulting in a wonderfully moist rice dish.

While the rice is cooking, prepare the beef topping. You can use beef for grilling or bulgogi. Mince the beef. In a bowl, combine the minced beef with 1/2 Tbsp minced garlic, 1/2 Tbsp soy sauce, a pinch of sugar, and a little pepper. Mix well. Heat a frying pan and stir-fry the seasoned beef until cooked.
