Spicy and Aromatic Braised Pork Ribs (Dongin-dong Style)

Main Ingredients

  • 1.5kg Pork Spare Ribs
  • 1 Onion
  • 1 Green Onion (Scallion)
  • 3 Cheongyang Peppers (Spicy Korean chili peppers)
  • A little Sesame Oil
  • 1L Water

Seasoning A (Marinade)

  • 3 Tbsp Soy Sauce
  • 1 Tbsp Soup Soy Sauce (Gukganjang)
  • 5 Tbsp Sugar
  • 1 Tbsp Plum Extract (Maesilcheong)
  • 1 Tbsp Mirin (Rice Wine)
  • 2 Tbsp Minced Garlic

Seasoning B (Simmering)

  • 2 Tbsp Gochugaru (Korean chili flakes – spicy type)
  • 3 Tbsp Gochugaru (Korean chili flakes – regular type)
  • 2 Tbsp Corn Syrup (Mulyeot)
  • 1/2 Tbsp Black Pepper
  • Sesame Seeds (to taste)

Cooking Instructions

Step 1

Preparation: Start by rinsing the pork ribs under cold running water. Soak them in cold water, changing it 2-3 times every 20 minutes for about 1 hour to remove any blood. While the ribs are soaking, prepare the “Seasoning A” by mixing all the ingredients together in a bowl. Chop the onion into large pieces, and slice the green onion and Cheongyang peppers diagonally.

First Boil: Place the pork ribs in a pot of water and bring it to a rolling boil. Let them boil for about 5 minutes. This initial boiling helps to remove impurities.

Clean the Ribs: After the initial boil, drain the water and any impurities that have risen to the surface. Rinse the pork ribs thoroughly under cold running water to ensure they are clean.

Simmer with Seasoning A: Return the clean ribs to the pot and add the prepared “Seasoning A” along with 1L of water. Bring to a boil over high heat, then reduce to medium heat. Cover partially (or leave the lid open as instructed) and simmer for about 40 minutes, allowing the flavors to penetrate the meat.

Reduce Sauce and Finish: Add “Seasoning B” to the pot. Stir occasionally and continue to simmer until the sauce has thickened to your desired consistency. In the final 3 minutes of cooking, add the sliced green onions and Cheongyang peppers, stirring them in. Finish by drizzling in a little sesame oil and giving it a final stir.
